1/2 c. bread crumbs
1 celery stalk with leaves, chopped
1/2 c. finely chopped red bell pepper
2 T. minced shallot
1 T. finely chopped parsley
2 T. coarse Dijon
2 T. mayo
1 egg
1 tsp. Old Bay seasoning
1 lb. lump crab meat
2 tsp. oil
1/2 c. flour

Directions:
Directions:
Heat oven to 350º. Mix first eleven ingredients, heat oil and make 8 cakes. Dredge in flour, coat skillet with cooking spray and cook 2 minutes on each side. Add oil to pan to loosen cakes as needed when flipping. When done, transfer to paper towels to drain excess oil. Coat a baking sheet with cooking spray and bake crab cakes 8-10 minutes.
