2 C flour
1 C sugar
1 1/2 tsp. baking powder
1/2 tsp. soda
1 tsp. salt
1 egg, well beaten
2 T melted shortening
1/2 C chopped nuts
2 C fresh cranberries, cut in halves
Juice and rind of 1 orange

Directions:
Directions:
Mix dry ingredients. Combine orange juice, grated rind, melted shortening, and enough water to make 3/4 C juice. Stir in beaten egg. Pour into dry ingredients. Fold in halved cranberries and nuts. Spoon into greased 9x5x3 loaf pan. Bake at 350º for 50-60 minutes. Remove from pan. Cool. Store overnight for easy slicing.
