8 cloves garlic, minced
3 T. ginger root, peeled & grated
1/2 c. fresh cilantro, chopped
1/2 c. chicken stock
1/2 c. fresh lemon juice
6 T. honey
1 T. ground cumin
dash cinnamon
1 T. sweet paprika
1 T. cornstarch
1/2 tsp. red pepper flakes
dash nutmeg
1/2 c. Kalamata olives, pitted & chopped.

Combine in cold saucepan & simmer til thickened. You may use a few tablespoons to marinate the chicken or fish for 1-8 hrs before cooking. Cook/grill the meat, then top with a spoonful of sauce before serving.
