1 head Romaine lettuce
1 clove garlic, cut in half
5 T olive oil
1 tsp Dijon mustard
2 T grated Parmesan cheese
3 T fresh lemon juice
dash of freshly ground pepper
1 coddled egg yolk
3/4 C seasoned croutons
2 anchovy fillets

Directions:
Directions:
Wash lettuce and tear into large pieces.
Put into Ziploc Bag and refrigerate until serving time.
Right before serving rub garlic halves around inside of large wooden salad bowl, discard garlic.
Add lemon juice, oil, mustard, and pepper.
Crush anchovies into dressing.Add coddled egg yolk, mix well.
Add Romaine, croutons, half Parmesan cheese, and toss lightly.
Sprinkle each serving with Parmesan cheese.
