1 pkg (4-oz) Jello Lemon Pudding and Pie Filling
2/3 C sugar
2 1/4 C water
3 egg yolks
2 T lemon juice
2 T butter
1 baked 9" pie shell, cooled
3 egg whites
6 T sugar

Directions:
Directions:
Combine pie filling mix, 2/3 C sugar and 1/4 C water in saucepan.
Blend in egg yolks and remaining water.
Cook and stir over medium heat, until mixture comes to a full bubbling boil. Remove from heat.
Blend in lemon juice and butter.
Cool 5 min, stirring twice.
Pour into baked and cooled pie shell.
Beat egg whites until foamy.
Gradually beat in 6 T sugar and continue beating until mixture forms stiff shiny peaks; spread over pie filling.
Bake at 425º for 5-10 min, or until meringue is delicately browned. Cool before cutting.

Without a doubt, my most favorite pie. I always used to have it for my birthday, with candles and everything. (Colored wax on the meringue was part of the fun...)

Watch the meringue baking like a hawk -- it can burn in the time it takes you to answer a telemarketer.
