Beets (enough to fill 2 qts.)
1 c. sugar
1 c. vinegar
1 c.water
1/4 tbsp. pickling spice

Directions:
Directions:
Prepare beets: Be sure to leave a 1" top when you cut the top. Wash and cook beets until tender (this is important for good pickles), cool and slip skins.

Cover beets with mixture and heat until all beets are hot. Seal in clean jars. This mixture covers about 2 qts.
