1 C flour
1/4 C powdered sugar
1 cube butter

2 eggs
1 C granulated sugar
2 T lemon juice
1/2 tsp baking powder
1/4 tsp salt

Directions:
Directions:
Beat flour, powdered sugar and butter until grainy.
Press into the bottom of a pan and bake at 350º for 20 minutes.

Beat other ingredients and pour on baked crust. Put back in oven and bake for 25 more minutes.

Sprinkle powdered sugar on top and let cool.

I am a sucker for these things. If I find them at a wedding, I can't see anything else on the table. I love the taste of lemon anyway (lemon meringue pie was always my birthday "cake") and the rich buttery crust is the perfect base.
