Ingredients: 1 whole roasting chicken Bag of red Simply Potatoes
Garlic-Rosemary Paste: 2 garlic cloves, minced 1/4 c. olive oil 2 sprigs of fresh rosemary, minced 1/8 tsp. salt Ground black pepper
Jus: 1/2 tsp. olive oil 1 3/4 c. low sodium chicken broth 1/4 c. dry white wine 1/2 c. water 1 sprig fresh rosemary salt and pepper to taste

Directions:Paste: Mix 1/4 to 1/3 cup olive oil, minced garlic cloves, minced sprig of rosemary, discard stem, salt and pepper.
Preheat oven at 450 degrees. Use 1/2 of the above mixture to coat potatoes. Place whole chicken in baking pan. Seperate skin from meat without tearing skin. Rub the other half of the above mixture under the skin of the bird and all around the outside. Put remaining rosemary inside of the bird. Salt and Pepper to taste. Spread potatoes on the bottom of the pan. Pour jus in the bottom of the pan. Place chicken back side up and bake for 15 minutes on 450º. Turn chicken over so breast side is up. Bake for another 15 minutes. Reduce oven to 375º and continue baking until done. Usually another 45 minutes depending on the size of the chicken. |
