1 lrg. onion, chopped
1 minced clove garlic
1/2 c. butter
1/2 c. flour
3 c. chicken stock
5 c. cooked, cubed chicken
1/2 sm. can diced green chilies
2 c. thin cream sauce:
(4 T. butter, 4 T. flour, 2 c. chix. stock,)
salt & pepper, to taste
1 lb. jack cheese, divided: 3/4 lb. cubed, 1/4 lb. sliced.
(may also add mushrooms, water chestnuts, celery, green onions, wine, etc.)

Directions:

Cook onion & garlic in butter until wilted. Blend in flour, stock - cook until smooth & thick. Add salt & pepper. Add chicken, cubed jack cheese & green chile peppers (mushrooms, etc., if desired). Fill crepes, arranging in baking dish. Pour cream sauce over and top with jack cheese slices. Bake 350 degrees for 30 min.
