Ingredients:  
1 can chicken breast (12.5 oz can)
2 cloves of garlic, chopped
½ cup finely chopped celery
¼ cup chopped parsley
2 slices of chopped red onion
1 T olive oil
1 or 2 drops Tabasco sauce
¼ tsp. salt, to taste
1 tsp. Italian seasoning
2 – 4 T of mayonnaise

Directions:

In a medium bowl, combine parsley, chicken, celery, red onion, garlic, salt, olive oil, Tabasco sauce, Italian seasoning. With a fork, mix and toss together. Add mayonnaise and with a fork press contents to eliminate the large chunks of chicken to the desired texture you want.
Cover and chill for 1 to 2 hours and serve as a sandwich on warm fresh rolls or, using an ice cream scooper, serve on a plate, two scoops on a bed of lettuce garnished with tomato wedges or fruit. Enjoy!!
