2 medium zucchini, coarsely grated and drained
1 bunch green onions, chopped
½ cup Romano cheese
¼ cup bread crumbs
¼ cup parsley, chopped
5 eggs, beaten
Salt and pepper to taste (cheese is salty, so use very little salt)

Combine all ingredients. Fry in oil like pancakes. Drain on paper towels.

Aunt Helen made a batch of these pancakes the last time she visited us in California. We devoured them like pigs! They are so delicious. Enjoy!
