1 ¾ lb hard red cabbage, cored and shredded
1 lb apples, quartered, peeled and sliced
½ lb onions, finely chopped
3 T wine vinegar
3 T light brown sugar
¼ tsp ground cinnamon
1 large garlic clove, crushed
Salt and pepper

Directions:
Directions:
Preheat oven to 300°. Combine all ingredients together in a large ovenproof pan and bring to a boil, stirring well. Cover and transfer to the oven. Cook for 2 – 2 ½ hours, or until the cabbage is very tender, stirring once or twice. Once the cabbage is cooked, serve it immediately. Or turn the oven off and leave the pan inside – the cabbage will retain its heat for up to 20 minutes.

Cooked this way, red cabbage will lose its bright color and become a more mellow reddish brown. It reheats very successfully and can be made up to 2 days ahead
