1 Tbs. olive or vegetable oil
1 tsp. finely chopped fresh garlic
1 tsp. finely chopped fresh gingerroot*
2 large (2 cups) ripe tomatoes, seeded, chopped
1/8 tsp. red pepper flakes
1 (15 oz.) can garbanzo beans, rinsed and drained
hot cooked rice

In 2-quart saucepan heat oil; stir in garlic and gingerroot. Cook over medium high heat 1 minute. Add tomatoes and red pepper flakes. Continue cooking, stirring occasionally, until tomatoes soften slightly (5 to 6 minutes). Add garbanzo beans; continue cooking until heated through (3 to 4 minutes). Season to taste with salt and pepper. Serve over rice.

*1/4 tsp. ground ginger can be substituted for 1 tsp. finely chopped fresh gingerroot.
