Chicken Frico Recipe

6 chicken legs

onion salt
poultry seasoning
1 dozen potatoes

Directions:
Directions:
Place the chicken legs in a large pot. Sprinkle salt, pepper, onion salt, and poultry seasoning over chicken. Add water to cover chicken and bring to a boil. After water begins to boil, put on medium high heat and cook for 1 1/2 hours. When done, remove chicken from water.

Peel about 1 dozen potatoes. Cut into small cubes (the size that would fit onto a teaspoon). Rinse and put into the chicken broth. Add more water and plenty of salt and bring to a boil.

When chicken is cool enough to handle, remove chicken from bones. Put chicken back into the pot with the potatoes. Taste test to make sure it is seasoned to your taste. If not, add more onion salt and poultry seasoning. To make this a true cajun soup, add plenty of pepper. Serve with hot French bread.

Optional: You can add a bag of frozen corn or other veggies after the potatoes are cooked.
