3 Tbsp. oil
1 large onion, diced
1 cup celery, diced
1 clove garlic
1 - 16 oz. can crushed tomatoes
6 cups water
1/2 cup diced carrots
2 cups zucchini
1 basil leaf (or) 1 tsp. dry minestrone soup mix
1 Tbsp. parsley
1/2 cup elbow macaroni
1 can kidney beans
Salt to taste.

Put oil in pan and saute onion, celery, and garlic until soft. Add crushed tomatoes and water and bring to a boil. Add carrots, zucchini, basil or soup mix, parsley, macaroni, and kidney beans. Salt to taste. Reduce heat and simmer for 10 minutes .
