2 1/4 c. flour
1/2 tsp soda
1/2 tsp. salt
1 c. sugar
1/2 c. soft butter
2 eggs
1/2 c. buttermilk
1-8 oz. crushed pineapple with juice.
1 c. chopped almonds
1/2 c. coconut
1/2 tsp almond extract

Directions:
Preheat oven to 350º Grease and flour two 7 1/2 by 3 3/4 by 2 1/4 loaf pans. Mix in small bowl,flour, baking soda, and salt; set aside.In large bowl beat sugar and butter till fluffy, and eggs,blend in half of flour mixture. Beat in butter milk, add remaning flour. Add pineapple with juice, almonds, coconut, and almond extract. Pour into pans
