3 c. flour
1 T. & 1 t. baking powder
1 1/2 t. salt
1 c. sugar
1 t. cinnamon
1 t. nutmeg
2 beaten eggs
1/2 c. oil
1 c. milk
1 15oz. can Libby's pumpkin

Directions:
Directions:
Mix dry ingredients and set aside. In a seperate bowl beat eggs then add remaining wet ingredients. Combine all ingredients. Spoon batter into sprayed muffin tins. Bake at 375º for 18 min.

(From Judy Tew) These muffins are from Margaret's family, and are good and moist. A trick I learned from working in the Bountiful Temple Kitchen - Spray muffin paper cups with cooking spray before filling. The muffins will come off the paper more easily!
