4 - 5 large green or red bell peppers
Salt to taste
4 T. extra-virgin olive oil
1 med. onion, chopped
1 clove of garlic, chopped
1 lb. ground beef, lean is best
1-1/2 c. cooked rice or 3/4 c. raw instant rice
1 14.5 oz can diced tomatoes
1-1/2 t. dried oregano
Pepper
1/2 c. ketchup
1/2 t. Worcestershire Sauce
Dash of Tabasco sauce

Directions:
Directions:
Preheat oven to 350º. Bring a large pot of water to boil over high heat. Cut top off peppers 1" from the stem end, and remove seeds. Add salt to boiling water, then add peppers and boil, using a spoon to keep peppers competely submerged, until bright green and they are softened, about 3 minutes. Drain, set aside to cool.
Heat 4 T. of oil in large skillet over medium heat. Add onions and garlic, cook until soft and translucent, about 5 minutes. Brown beef; add cooked onions and garlic, rice, tomatoes, oregano, salt and pepper, to taste. Mix well.
Arrange peppers cut side up in a baking dish, then stuff peppers with filling.
Combine ketchup, Worcestershire Sauce, and 1/4 c. of water in a small bowl, then spoon over filling. Add 1/4 c. of water to the baking dish. Place in oven and bake for 30 minutes. Serves 4.
