1 tbsp. unflavored gelatin
4 tbsp. cold water
1 cup boiling water
2/3 cup sugar
2 egg whites stiffly beaten
4 tbsp. lemon juice

Sauce: 2 egg yolks beaten
2/3 cup milk
2 tbsp. sugar
1 tbsp. flour
pinch salt

Soak gelatin in cold water for 5 minutes. Add boiling water; stir until gelatin is dissolved. Add sugar and fresh lemon juice. Mix well; allow to stiffen a little. Beat until frothy. Add beaten egg whites; beat together for 3-4 minutes. Refrigerate.
To make sauce: Mix yolks, sugar, milk, flour, and salt. Cook until thick. Add 1/8 tsp. vanilla, 1/8 tsp. lemon juice, and lump of butter. Stir and cool.
Serve in dessert dishes and garnish with a shake of nutmeg.

My mother made this dessert often, usually for Sunday or company dinners. It was inexpensive to make - especially in the 30's and 40's. The recipe can be doubled easily.
