1/3 cup red wine vinegar
1 TBS honey dijon mustard
1/4 cup chopped parsley (or 2 TBS dried parsley)
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp Creole seasoning
1/4 cup oil
1 can yellow corn niblets
2 cans black eyed peas, drained and rinsed
1 - red bell pepper, chopped (or 2 oz drained pimento)
1 red onion chopped fine
3 stalks celery chopped fine

Directions:
Directions:
Blend vinegar, mustard, parsley, salt, pepper, and Creole seasoning. Whisk in oil and set aside. Combine corn, peas, bell pepper, onion, and celery. Toss dressing with vegetables and refrigerate until ready to serve.
