2 medium zucchini
1/2 cup chopped onions
2 -3 large chopped tomatoes
1/2 cup cooked rice
1/2 tsp fresh parsley
1/2 tsp basil;
1/2 tsp oregano

Directions:
Directions:
Slice zucchini about 1/2 in. thick and cut each slice in half.

In a non stick skillet, cook zucchini over medium high heat in a little water until tender. Drain.

Saute onions until tender; add the seasonings and the tomatoes. Cook for just a few minutes; add zucchini, stirring occasionally for about 5 minutes.

Serve over rice and add parsley.

This recipes makes about 2 servings.
