2 Cups Heavy Cream
2/3 Cup Boursin Cheese
2 Tbsp. Minced Shallots
1 Clove Garlic
2 1/2 Lbs. Red New Potatoes, sliced thin
Salt and Pepper
2 Tbsp. Snipped Chives
2 Tbsp. Chopped Parsley

Directions:
Butter a 13x9x2 inch baking dish. Heat cream, Boursin cheese, shallots and garlic, stirring until cheese melts. Preheat oven to 400 degrees. Arrange half the sliced potatoes in the baking dish in slightly overlapping rows.. Season with salt and pepper. Pour half of cheese mixture over potatoes, sprinkle with chives. Repeat layering with remaining potato slices, more salt and pepper and cheese mixture. Bake about one hour or until potatoes are tender and top is golden brown. Sprinkle with Parsley.
