Ingredients: 1 tablespoon shortening (or butter, I use butter) ½ cup chopped onion 2 tablespoons flour 1 cup chopped green chile (hot or mild, varied amounts may be used, I also use frozen or fresh, those chilies usually have the best flavor) 1 cup chicken broth (canned or homemade) ¼ teaspoon garlic powder ¾ teaspoon salt

This is an awesome green chile recipe that my dad and mom used to make all the time. I grew up in New Mexico so green chile was a staple in our house. You can pour it over grilled chicken, or we used to always cook up ground beef and fry some corn tortillas in a skillet and kind of make tostadas. You put a tostada on a plate then add the ground beef and pour the green chile on top, we also put tomatoes and lettuce on top and of course cheese, Marty loves this recipe. My parents used to put a fried egg on top of the ground beef and then cheese and the green chile sauce. You can also put this sauce over scrambled eggs and make Huevos rancheros . You can buy frozen green chile by “Bueno” at King Soupers and Albertson’s.
This makes about 2 cups and it freezes well in case you don’t use it all. |
