Ingredients:  
Ingredients:  
3 cups flour
2 cups white sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 eggs - beaten
1 tsp. vanilla
1 cup chopped nuts
2 cups shredded carrots
1 4 oz. can crushed pineapple and juice

Icing:
1 stick butter or margarine
1 8oz. cream cheese - softened
1 lb. powered sugar

Directions:
Directions:
Mix all ingredients together and place in 8" or 9" round cake pans or a 13 x 9 baking dish. Bake @ 350º for 1 hour. Set a side and let cool. Mix Icing ingredients together and spread on cooled cake.
