1 - 8oz pkg. cream cheese
1/2 cup margarine
1 1/2 cups flour
Sugar
1 teaspoon grated lemon rind

Directions:
Directions:
Combine softened cream cheese and margarine, mixing until well blended. Add flour, 1/4 cup sugar and lemon rind. Form into a ball and chill thoroughly. On a lightly floured surface, roll 1/4 cup dough to 1/8" thickness. Cut with assorted mini-cookie cutters. Sprinkle with sugar and place on an ungreased cookie sheet. Bake at 375º 8 - 10 minutes or until edges are lightly browned. Spread the remaining dough into the bottom of a 9-inch springform pan. Bake at 375º for 25 minutes. Cool. Press remaining dough around the sides of the pan. Add the cheesecake filling and bake at 300º for about one hour. Loosen cake from the rim of the pan, cool, and remove the rim. Spoon the topping of your choice over the cheesecake and decorate with the cut-outs.
