1 Cup shortening
1 Cup butter or margarine

2 Cups brown sugar
2 Cups sugar
4 t vanilla
4 eggs

4 cups flour
2 t baking soda
2 t baking powder
pinch of salt

2 cups oatmeal
2 cups cornflakes
1 cup coconut
1 cup chopped pecans
2 cups chocolate chips
1 cup white chocolate chips

Directions:

In a large bowl, mix together shortening and butter. Blend in sugars, vanilla, and eggs.

In another bowl, sift together flour, baking soda, and baking powder. Add to the other mixture in large bowl. Add remaining ingredients.

Use a large tablespoon or small ice cream scoop to measure about 1/4 cup for each cookie. bake 6 to a large cookie sheet. Bake at 350º for 10-12 minutes. The cookies often do not look completely cooked in the center of the cookie. Do not overbake or they will be hard. Cool on cookie sheet for several minutes before removing.
