1/2 cup chopped onion
1/2 cup water
4 well-beaten eggs
1/4 cup fine dry bread crumbs
1/2 tsp salt
1/8 tsp pepper
1/8 tsp dried oregano, crushed
2 or 3 drops bottled hot pepper sauce
2 cups (8 ounces) shredded natural cheddar cheese
2- 6 ounce cans or jars marinated artichoke hearts, drained and finely chopped

Cook onions in water till tender, about 5 minutes; drain. In bowl, combine eggs, bread crumbs, salt, pepper sauce. Stir in onion, cheese, and artichokes. Spread in a greased 11 X 7 1/2 X 1 1/2-inch baking pan. Bake in 350º for 17 to 18 minutes. Cut into 1-inch squares. Serve hot/warm garnish with pimiento strips if desired. Makes 61/2 dozen appetizers.
