Lemon Cake Mix
Lemon jello (3 oz.)
4 eggs
3/4 c water
3/4 c cooking oil
1 tsp lemon extract

Directions:
Directions:
Mix all ingredients and beat on medium speed for 4 minutes. Bake in a tube pan at 300 for 45 minutes.
Topping: 1 cup powered sugar, 1/2 cup lemon sugar. Heat topping until sugar is dissolved. Pour over hot cake while still in pan. Let cake cool for 10 minutes and then remove.

This is a very moist cake and was a favorite of my family. I often substituted apicot juice for the water.
