1 onion, chopped
chopped garlic (optional)
1 cup dried lentils, uncooked
1 cup brown rice, uncooked
1 small to medium can tomato sauce
1 small can of mushrooms
1 medium can pinto beans
2-3 Tbs. ketchup
2 tsp. basil
1 tsp. chili powder
1/2 tsp. garlic powder
3 beef bouillon cubes
6 cups water
salt and pepper

Rinse and sort lentils. Set aside. Sauté onion and garlic in a large stew pot. Onion can be sautéed in oil (1 Tbs.), wine (3 Tbs.) or sherry - or all three - it is your choice. I prefer wine because that provides a good excuse to open a bottle. Salt and pepper the onion. Add lentils, rice, bouillon cubes, water, salt and pepper to taste. Stir, bring to a boil (uncovered). Lower heat, cover and simmer 30-40 minutes or until lentils and rice are cooked. Uncovered, stir, add tomato sauce, beans (with liquid), mushrooms, ketchup, spices, and salt and pepper to taste. Heat through. Serve with red wine.
