Ingredients: 3 cups of water 1 cup quick-cooking grits (like Jim Dandy) 2 cups grated sharp Cheddar cheese 1 stick butter/margarine, cut in 5 - 6 pieces 3 eggs ½ teaspoon garlic powder or 1 teaspoon minced garlic (browned in a little of the butter) ½ teaspoon salt, or to taste ¼ teaspoon pepper

Directions:Bring water to a boil in a 2 quart saucepan. Add grits and return to a boil. Reduce heat to simmer and cook gently until thickened (about 5 minutes). Remove from heat, add cheese and stir until melted. Add butter/margarine. Beat eggs and seasonings. Mix in butter and gradually add egg mixture until combined. Pour into a 1 quart casserole and cook 40 - 45 minutes at 350° until "set".
Microwave instructions: Mix water and grits in a 2 quart microwaveable container. Cook for 8 - 9 minutes on Full Power, stirring after each 2 minutes. Mix according to previous directions. Cook in microwaveable casserole on 80% power 5 - 6 minutes or until "set". Stir after 3 minutes. You may wish to brown top in oven or under broiler for a few minutes. |

Notes: This is nice for breakfast, brunch, lunch or supper. This grits recipe is one that even "grits impaired" folks always seem like. I usually increase the amount of garlic or garlic powder.
