Microwave Peanut Brittle Recipe

1 cup raw peanuts
1/2 tsp. salt
1 tsp. oleo
1 tsp. baking soda
1 cup sugar
1/2 cup white Karo syrup
1 tsp. vanilla

Directions:
Directions:
Stir together peanuts, salt, sugar and corn syrup (will be thick to start). Cook in microwave oven for 8 1/2 minutes, stopping at the end of 4 minutes, turn dish & stir good. Return to microwave oven and cook 4 1/2 minutes. At the end of the 8 1/2 minutes add oleo, and vanilla and stir well. Then cook 1 1/2 minutes longer. Remove from the microwave oven and add soda, mix well. Pour onto foil, spread to cool. You do not have to butter foil, but I do. After the peanut brittle has cooled well, break into small pieces and store in an airtight container.

This is a really good recipe for Peanut Brittle. It always does better if the weather isn't too humid when you make it.
