2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
2 tsp pumpkin pie spice
1 cup cooked mashed sweet potato (or pumpkin)
1/2 cup sugar
1/4 cup vegetable oil
1/2 cup lowfat vanilla yogurt
2 eggs
1/2 cup nuts (optional)

Preheat oven to 350º. Spray a 8x4 loaf pan with cooking spray. In medium bowl, combine flour, baking powder, salt, baking soda, and pie spice; set aside. In another bowl, beat sweet potato, sugar, oil, yogurt, and eggs until smooth. Add flour mixture, stirring only until moistened; do not overmix. Fold in nuts and spoon into prepared pan. Bake 55 minutes or until toothpick comes out clean. Cool 10 minutes; remove from pan. Cool completely before slicing.
