3 (10oz) boxes frozen chopped spinach, thawed
1 (8 oz) pkg cream cheese, softened
1/2 cup butter, softened
4 Tbsp sour cream
1 Tbsp grated lemon rind
1 - 2 Tbsp minced onion
1/2 tsp horseradish
1 cup seasoned stuffing mix
salt and pepper

Preheat oven to 350º. Lightly grease 2-qt baking dish. Drain spinach in colander -- squeeze out liquid. In a large bowl, stir together cream cheese, butter, and sour cream. Mix thoroughly. Add spinach, lemon rind, onion, and horseradish. Season with salt and pepper. Spoon into baking dish and cover with stuffing mix. Bake about 20-30 minutes or until edges begin to bubble.
