Yellow tail (4- 8 oz filets)
milk, flour to dredge
1 1/2 cups of white wine
2 oz lemon juice
2 oz orange juice
4 oz salted butter
grated orange peel
2 oz heavy cream

Directions:
Directions:
Dip filet in milk and dredge in flour. Saute in pan (hot) w/ olive oil and butter, skin side up to start. Saute both sides until golden brown. Finish in 400 oven for about 5 min. Remove fish and place on plate.

Empty oil from pan. Reduce 1 1/2 cups white wine, 2 oz lemon juice, 2 oz orange juice, 4 oz butter and grated orange peel until thickended. Pour sauce over fish, garnish w lemon and orange
