1 beef chuck roast
garlic cloves, peeled and cut in half
olive oil
carrots
celery
potatoes
onions

Directions:
Directions:
Use an electric frying pan or a dutch oven on top of the stove. Cut small, deep slits in various places on the roast and place garlic halves deep into the roast. Place olive oil in the pan and brown both sides of the roast. Add 1 cup water, cover, and cook on low. Check frequently to be sure it doesn't dry out and add water as necessary. Cook for 3 to 4 hours or until done. The water and the juices from the meat combined should be used to make gravy. Par boil the onion, carrots, celery and potatoes. Add to the pan with the roast and cook for 30 minutes or until tender.
