3 c cream
10 - 12 oz fresh shitake and portabella mushrooms
Butter and olive oil for sauteeing
4 - 8 oz Reggiano (parmesan) cheese
Salt and pepper, to taste
Parsley for color

Directions:
Start with 1/3 more cream than you want sauce. He used 3 cups of cream that reduced to 2 cups. Boil cream for 45 - 60 minutes until it is reduced to 1/3 of original amount. Watch for scorching. Put fresh shitake and protabella mushrooms in a food processor or chop extra fine, and then sautee them in a bit of butter and olive oil. When the cream is reduced, add chopped mushroom and about 4 - 8 oz of fresh Reggiano (parmesan) cheese, salt and pepper to taste, and parsely for a little color.

We had this at a church function and we were begging for little cups of the sauce to dip our chicken into. He baked some seasoned chicken breasts with the bone in and then poured the sauce over the chicken. This is awesome and sooo bad for you but oh man is it good.
