Ingredients: 2 cans whole tomatoes 1 large white or yellow onion (make sure it's big!) 5 cloves fresh garlic 1-2 jalapenos (depending on how hot you like it!) salt pepper garlic salt 1 bunch fresh cilantro 2 lemons red pepper flakes (optional to taste)

Directions:In a food processor or blender, finely chop the fresh garlic cloves and onion. It is easiest if the onion is quartered first. Drain the juice from the two cans of tomatoes and place in the food processor with the onion and garlic and roughly blend together. Rinse the cilantro and take the leaves off of about half to 3/4 of the bunch, and mix it with the tomatoes, etc. Take about a 1/2 tsp. of salt and put it into the mixture whilt it is blending. Do the same with about 3/4 tsp. of garlic salt. Cut the jalapeno in half and scrape out the seeds. Put the jalapeno halves into the processor with the rest of the mixture and blend until it is finely chopped. Take the juice from about 1 1/2 to 2 lemons (depending on how you like it) and mix it in while it is blending. Take about 1 tsp. more of garlic salt and about a 1/2 tsp. of pepper and mix it in with the rest of the salsa. If you like, you can also add about 1 tsp. of red pepper flakes to the mix. |

Notes: Taste the salsa as you go along and adjust the flavors to your taste buds. For smoother salsa use a food processor instead of a blender.
