1 lb ground beef
1/2 lb ground veal
1/2 lb ground pork
2 eggs
2 cups bread crumbs
1 clove minced garlic
1 cup fresh grated pecorino romano
2 tablespoons fresh chopped parsley
1 to 1-1/2 cups luke warm water

Directions:
Directions:
Combine all the meats in a large bowl. Salt and pepper to taste. Misin the 2 slightly beaten eggs. Add in the cheese, the bread crumbs, the garlic and prasley. Now solwly add the warm water...the whole time mixing the misture with your hands. Once all the water is incorporated, let mix set about 10 minutes. This makes very moist 2" meatballs. Fry in olive oil till brown, then drop in pasta sauce and let simmer at least 20-30 minutes.
