1 serving-
6 oz filet Mahi Mahi
salt and pepper
flour
butter
lemon juice
1/2 -1 tsp. capers
pinch each; grated fresh lemon rind and chopped parsley
6 to 8 crutons
worcestershire sauce-several drops

Directions:
Directions:
Saltand pepper the fish. Dredge in flour and brown in melted butter- simmer until tender. Pourexcess butter from the pan, add 1 Tbsp fresh butter. After butter has melted put fish on platter adding lemon juice and keep warm.
Add remaining butter, capers, lemon juice and parsley, crutons and worestershire. Cook until butter foams. Pour over fish and serve.

This recipe is from the Maui Surf Hotel. We would go to the early dinner and Hawaiian show in the 1970's. They had an open air, almost round dining room. There wasn't a bad seat in the house and the food was wonderful. The fresh Mahi Mahi was our favorite. The Maui Surf was where the Westin Kanapalli is now.
