½ c butter
½ c vegetable oil
1¾ c sugar
2 eggs
2 c grated zucchini
1 Tbsp vanilla
2 c flour
½ c buttermilk
5 Tbsp unsweeten cocoa
½ tsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder

Directions:

Combine all ingredients in order. Mix well and pour in greased 9"x13" pan. Bake at 350º for 40 -45 minutes. Cool and frost with chocolate frosting.

When we lived in Logan, there was always a surplus of zucchini in the fall. I was always on the hunt for something to do with it all. What could be better than a fabulous chocolate cake. We couldn't let those zucchinis go to waste so we ate a lot of chocolate cake, darn!
