2 cups sugar
1 cup plain flour
2 tsp baking soda
2 tsp cinnamon
1 tsp salt
1 cup light oil
4 eggs
3 cups grated carrots

Directions:
Directions:
Sift and mix dry ingredients. Add oil and stir well. Add egss - one at a time and stir well. Add carrots.

This makes 3 layers
Bake at 350 degrees for 35 minutes

This is my FAVORITE cake! Mama made it for my birthday every year! ( I cut the sugar in half nowadays--no one ever seems to notice.)
