2 Large Plantain Bananas - very ripe and soft
1 cup extra virgin olive oil

Directions:

Heat the oil in skillet until ready for frying.

Slice the platanos (plantains) on the diagonal, making several slices, each about 1/4 inch thick.

Place the slices in hot oil, and fry until the edges become light golden brown. Turn only once and fry on other side of each slice. Check them to be sure not to burn - fry just until both sides are light golden brown.

Place slices on paper towels to drain.

Serve warm.
