Ingredients: Salad: 1 - 16oz bag fresh Cole Slaw Cabbage Mix 1 bunch green onions, diced 1 small can slices mandarin oranges (drained and patted dry with paper towel) 1 Cup cooked boneless chicken breast, (diced into small chunks) 1/2 Cup dry roasted cashews or slivered almonds (optional)
Crunchy Noodle Topping: 1 package Oriental Ramen Soup Mix 1 Tablespoon sesame seeds 2 Tablespoons butter
Oriental Dressing: 1/2 Cup Seasoned Rice Vinegar 1/4 Cup white granulated sugar 1 heaping tablespoon sesame oil 1/2 teaspoon ground black pepper 1 Tablespoon sesame seeds

Directions:To assemble salad: In salad bowl, layer salad ingredients in order shown. For crunchy topping: Melt butter in skillet, blend in seasoning packet from soup mix and 2 Tbsp sesame seeds until seeds are lightly toasted (a few minutes). Place oriental noodles into ziplock plastic bag, seal and break into small pieces. Pour noodles pieces into skillet and saute in butter mixture just until browned. Set crunchy noodle mixture aside on paper towels to drain. Store the crunchy mixture in a separate container until ready to toss and serve in salad. To mix Oriental Dressing: Shake all dressing ingredients together in a sealed container. Store the dressing in a separate container until ready to toss and serve in salad immediately after tossing. Just before serving this salad, spread crunchy topping over the salad mix, pour dressing over the salad and gently toss all together. Serve immediately. |
