1 large egg
3/4 cup packed light brown sugar
1 1/3 cups mashed ripe bananas (I use 5 medium sized bananas to make it more moist)
1/2 cup raisins (or Craisins) or chopped walnuts
1/3 cup vegetable oil
1 tsp. vanilla
3/4 cup all-purpose flour
3/4 cup whole wheat flour (or 3/4 cup all-purpose flour if you don't have wheat flour)
1/2 cup oat bran (in the bulk food section of the grocery store)
2 tsp. baking powder
1/2 tsp. baking soda
1 tsp. ground cinnamon
1/4 tsp. salt

Preheat oven to 375º and put muffin papers in muffin baking tin. Mash bananas and set aside. Beat egg and sugar together, then add mashed bananas, raisins or nuts, oil and vanilla. Mix well and let stand for a minute or so. In a separate bowl, combine white flour, wheat flour, oat bran, baking powder, baking soda, cinnamon and salt. Mix well and add slowly to banana mixture. Beat just until dry ingredients are moistened. Spoon into muffin cups at least 3/4 full and bake at 375º for 20-23 minutes until golden brown and springy to the touch. Turn out onto a cooling rack.

Will keep for about 1 week (if they last that long) in covered container in refrigerator. Great breakfast or afternoon snack - healthy and delicious!
