2 yeast cakes
6 1/2 cups flour
2 1/4 cups water
2 tsp. salt
2 eggs
1/2 cup oil
1 cup sugar

Mix yeast with 1 cup lukewarm water and 1 tsp. sugar. Let stand for 10 minutes. Should rise to 2 cups measured. Put flour, sugar and salt in a large bowl. Make hollow in mixture and add eggs, oil and balance of water (1 1/4 cups). Mix in yeast mixture and knead. Keep adding flour to prevent sticking and knead a bit more. This dough is very sticky with only 6 1/2 cups flour. I add about 2-3 cups more flour or until it is lightly stiff. Butter entire bowl and one side of large (covering) plate. Let stand until dough has risen to double the bulk. Pour onto floured counter top sprinkled with flour and roll out about 1/2 inch thick. Use a pizza cutter and cut squares. Place a small amount of butter on half and fold in half. Place on baking sheet and let rise. Bake at 350º for approximately 20 minutes.

SWEET ROLLS: Butter tins, flour counter and roll out dough to 1/2" thickness. Sprinkle very thickly with cunnamon, brown sugar and a little nutmeg. Press lightly into dough. Add raisins if desired and nuts. Roll dough into large roll and use string to slice into 1" rolls. Sprinkle pan with brown sugar and place single rolls in pan. Let rise for 1 hour and bake at 350º for 20 minutes.
