6 cups warm water
1 cup potato flakes
2 Tbs. yeast
1/2 cup brown sugar or sucanut
1/2 cup oil
2 Tbs. salt
1 cup cooked whole wheat (optional)
6-8 cups whole wheat flour
1/3 cup wheat gluten mixed in
remaining white flour to correct consistency

Directions:
Knead 10 minutes, pour out onto oil counter top and pinch off enough dough for the loaf pan. Shape into loaves and put into well oiled bread pans. Let rise and bake at 350º for 30 minutes. Butter top of loaf for soft crust. Turn out onto rack to cool.
