Dressing:
3/4 c extra virgin olive oil
3 T fresh lemon juice
3 T red wine vinegar
3 T water
1 T Dijon mustard
1/8 tsp salt
1/8 tsp pepper

Salad:
2 heads red leaf lettuce
2 c dried cranberries
1/2 c pecan halves, toasted
4 oz. bleu cheese, crumbled
3 green onions with tops, sliced
1 to 2 red apples, cut into chunks

Directions:
Directions:
Mix together dressing ingredients and refrigerate ahead of time.
In a salad bowl, top lettuce with cranberries, pecans, bleu
cheese, green onions, and apples. Pour dressing over salad
right before serving.

A great salad! I use more bleu cheese and green onions than it
