4 cups cooked rice
1 - 4 ounce can chopped green chilies
1 lb. Monterey Jack cheese grated
2 c. Sour Cream
1/2 c. butter, melted

Directions:
Grease casserole dish. Mix all ingredients together except butter, and pour into dish. Pour the melted butter over the top. Bake at 375º for 30 minutes.

I got this recipe out of the Arizona Cotton Wives cookbook years ago. Goes great with Mexican food, or as a side dish instead of potatoes. It is easy to cut the recipe in half for smaller amount.
