3/4 pound sliced bacon, diced
1/2 cup chopped onion
1 cup cider vinegar
2 cups water
1 1/2 cups sugar
2 tablespoons Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
3 tablespoons cornstarch
2 tablespoons cold water

Directions:
Directions:
In a large skillet, cook bacon until crisp. Remove and set aside. Using 2 tablespoons of the bacon drippings, add the onion and saute until tender. Remove from heat and add the vinegar, water, sugar, mustard, salt, pepper, and bacon. Mix well. Combine cornstarch and cold water. Stir into skillet and bring to a boil. Boil for 2 minutes stirring constantly. Serve warm over fresh spinach or mixed greens.
