2 c. Sugar
1 c. Oil
4 Eggs
2 tsp. Coconut Flavoring
3 c. Flour
1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. Salt
1 c. Buttermilk
1 c. Coconut
1 c. Nuts
-Frosting-
1/2 c. Sugar
1/4 c. Water
2 tbsp. Butter
1 tbsp. Coconut flavoring

Directions:

Cocunut Bread
Beat sugar, oil, eggs, and flavoring until creamy. Add flour mixture alternately with buttermilk. Fold in coconut and nuts. Grease and flour 2 large loaf pans. Bake at 325ºF for 45 minutes or until done. Cool, leave in pans.

Frosting
Mix and boil for 5 minutes. Take off heat and add 1 tbsp. Coconut flavoring. Punch holes in bread with a fork. Pour frosting over hot cooked bread while still in pan. Cool. Remove from pan.
